Having just had an unfortunate accident regarding replacing in-game module files, I am rather hesitant to try that route again. Is there any way to make cameras without using the GIT file?

Don't know about cameras, but an alternative way to test your mods in an existing module is rebuild the whole module as a mod file...the mod file will be accessed during the game rather than the exising erf file...the erf file will remain in the modules folder but just be dormant...All the changes that you need to make will be done in your mod file rather than the original file thereby avoiding any deletions.....

You could use AniCam to create animated cameras, but it's probably easier in the long run to use an ordinary static camera, for which you do indeed need to edit the .git file. Remember to use K-GFF for this, as other GFF editors will break the camera fields.
