Things you can do with swkotor.ini: Enable Cheating
Make taking screenshots easier
Run in Windowed mode instead of Full screen mode (and this can be toggled in-game)

Enabling cheats
[Game Options]
EnableCheats=1

When set to 1, you can hit the tilde ~ key to bring up the cheat console in the upper left corner of the screen.

Making screenshots easy to take
also under Game Options...

EnableScreenShot=1

When set to 1, you can hit the Print Screen key, and each time you'll make a file in your root KotOR folder called KotORnnnn.tga (nnnn = a sequential number beginning at 0000)

Run in Windowed Mode by Default
This one REALLY handy for people working on mods where they have to constantly do some work, save files, then re-load a save game etc etc..

[Graphics Options]
FullScreen=0

When set to 0, you run in windowed mode.

Toggle between Windowed and Full Screen mode
[Graphics Options]
AllowWindowedMode=1

allows you to switch from fullscreen to window and vice versa by pressing ALT-Enter
