Hey I started the Jedi Knight series from outcast...can't say anthing about the other games besides that one.

But I love how they have improved the acrobatics in Jedi Academy.

When I was fighting a guy last night he knocked me down and immediately went to do a death from above move, and i barely got out the way using the roll while on the ground, i thought it was cool. it made it an exciting fight. i also like how you can kick back up and stuff...and all the other moves...but that just one of the cool factors here heh.
