its a Massive Multiplayer Online RPG, I believe galaxy is going to be similar but with much better graphics and different play style.
Ultima Online is set in a classic fantasy world.
I've heard that you can choose to be force-senstive,and that you don't have to be "drafted" by other jedi. Look at kyle Katarn (Jedi Kinght/Dark forces series), he wasn't discovered by a jedi and he's a jedi.
Hmm, that would be a goo way to do it. You could spend a good portion of your "points on being force-sensetive. Then if you train or meet other jedi or go to the right place, you can finally be a padawan, then a jedi knight.
