Can't tell you about the MP3's, but I can say that extracting music from The Dig with SCUMM Revisited is currently impossible. Sorry.

I know on LucasHacks there is a program that runs the music, but you obviously need the game. I recomend buying the official soundtrack off ebay, its on my to-do list.

I know that dig.mixnmojo.com has the soundtrack, plus I have recorded all the game music using the Dig Music Player from Lucashacks, and they too will be on dig.mixnmojo.com shortly I hope.

Just record it using any recording program. Yes, it's THAT easy.
