The MP modes out of the box are...
Deathmatch
Team Deathmatch
Capture The Flag
Duel - 1 v 1 lightsaber duels.
Power Duel - 1 v 2 lightsaber duels
Siege - team-based class-based objective-based gameplay with one team attacking, the other defending. Sort of like 'Assault' from UT, but different.

I beleive xMod also has a game called "freezetag" which is a variation of CTF. :)
