GTKRadiant itself comes with a fair bit of help, just hit F1.

Tutorials can be found at http://richdiesal.jedioutcastmaps.com/tutorials/) . They say JK2 but they will work for JK3.

Kengo's website has also got some Icarus scripting tutorials which are very important to give maps fucntionality.
